Smothered Chicken

by Heidi

So this is my Smothered Chicken recipe. It is delicious. My kids love it. My husband loves it. Guests love it. I think you will love it too!

Here is what you need to do first:

In a bowl, dump some flour, salt, pepper, and paprika. I just dump to taste for the salt and pepper, and about 1 teaspoon of paprika.

Then in your frying pan place 5 tablespoons of butter, let it melt.

Then Roll your chicken breasts in your flour mixture, making sure to coat it really good. Then place them in your melted butter.

Once you get them all in there let them fry for about 8 minutes.

Make sure to turn them over to do both sides.

Then add about 1 cup of water and cook on medium until the chicken is all the way cooked. I flip mine regularly during this time. If you have to add more water, go right ahead.

While they are cooking get a 9 by 13 pan out, and spray it with Pam.

Once the chicken is cooked place them side by side in your pan.

Then in the same frying pan that you used to cook the chicken, add more butter to the remaining juices. About 4 tablespoons. And about 1/2 cup of water. and i package of diced mushrooms. Let this simmer in the juices.

Then add 2 cups of half and half, 3 Tablespoons of flour, 1 bullion cube. Let simmer about 10 more minutes.

Then dump that over the chicken.

Cook that for 30 minutes.

Open the oven and place a slice of Swiss cheese on top of each chicken. Slide that back into the oven for another 5 minutes or until melted.
