Off again tomorrow…

I head out again tomorrow for the cancer center for another round of chemo with my mom. And will be back Friday am. I am not ready to leave this round, because I still have lots to do around my house! :) But since we have 5 kids, I ALWAYS have lots to do around my house, so I am trying not to be so hard on myself!

We tried making Banana Pancakes the other night. We made our homemade batter, than mashed 2 bananas in with it. It was so yummy! I ate mine with peanut butter on them. They were delish. Try them out sometime. Our kids gobbled them down. And they were super filling. :)

Happy Memorial Day. And thank you to all of those who have served in the past and present, and to those families who have had to go through loss. I appreciate all you do, so that I can have freedom. I know it has not been easy and it has cost some more than others. We are praying for you!

Carrot Cake

I wanted to make a carrot cake for my dad’s birthday. He is here with us right now. So I called my mother in law up, and asked her to send me some recipes. She sent me 2 and I just picked one. I personally HATE carrot cake. Never eat it. Do not like it…you get the point! But since it is his birthday I had to have a piece. :) If you like to try new things, YOU have to try this out. IT WAS SO GOOD! SO very good, that I kept eating it! It was so moist! So I guess I like “this” carrot cake! Enjoy!

From 2010-05-28

MIX ALL THESE TOGETHER:
1/2 cup oil, 3/4 cup sugar, 2 eggs, 1/2 tsp cloves, 1 tsp cinnamon, 1/2 tsp nutmeg, 1 tsp baking soda, 1/2 tsp salt, 1 cup grated raw carrots, 1/2 cup crushed pineapple, 1 1/2 cups flour.
****if it seems too dry, just keep on mixing until it gets moist or you can add about a tablespoon more of crushed pineapple.

Bake at 350 for 20-30 minutes.
This can be used for a 8 x 8 pan or 2 dozen muffins. ( I USED A CIRCLE PAN) I bet these would be great for breakfast. You could even add walnuts, or maybe raisins or coconut, if you wanted to get adventurous!

And it would not be complete unless you put Cream Cheese Frosting on it!
Cream cheese icing:

4 oz Philadelphia cream cheese, 1/4 cup butter, 1 tsp vanilla, 2 cups icing sugar. Beat together. When cake is cool, spread frosting on top of cake. Keep refrigerated after it is frosted.

Scottish Rite

We had another visit down at Scottish Rite today. Krystina got molds made of her legs for her braces that she will be wearing. She will have to wear them 24 hours a day for a year, and then after that we will re-evaluate her at that point. We also have an appointment set up with a Neurologist to determine some other factors. We are walking on new territory! I have been learning as much as I can, and reading and asking LOTS of questions. She will get her braces on June 17th. We are trying to be as positive as possible about the whole situation. And having the kids be super positive as well. This is definitely teaching them compassion towards those with special needs. Something I think every kid needs.

My dad flew in today for Benjamin’s graduation from Kindergarten. I still can’t believe he will graduate tomorrow. Where does the time go? It just seems like yesterday he was born. I love the fact that he is still my snuggle bug! He loves to be snuggles EVERY SINGLE morning, and I will do that as long as he wants, because I know one day, he won’t anymore.

Tomorrow night we are going to celebrate my dad’s birthday, I will be putting a roast in the crock pot and I am making carrot cake. Maybe I will take pictures and do a post on it! If I can get that organized! ha! :) Then later in the evening we are going to the kick off of the fireworks at the Lake. Every Friday night they have a fire work show until Labor Day! The kids are going to have a blast!

Buttermilk Biscuits

So I was looking for a good recipe of Biscuits. I have tried several others and they just do not turn out very good. So, I stumbled across Paula Deen’s recipe for Buttermilk Biscuits and made them. OH MAN! They were SOOO good. I used a cast iron skillet to bake mine. For reference, I also baked a few on a cookie sheet, and they did not turn out as good. So I highly recommend using the cast iron skillet. If you don’t have one, you can get one at Wal-Mart for like 12 bucks. I wish I had taken pictures, but I did not. Anyways, try these out! So yummo!

Ingredients

* 3 cups all-purpose flour
* 2 tablespoons sugar
* 2 1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* Pinch of cayenne pepper
* 1/2 cup vegetable shortening
* 1 1/4 cups buttermilk
* 1/4 cup butter, melted and divided
Steps

Preheat oven to 450 degrees F. In a large bowl mixing bowl, combine flour, sugar, baking powder, baking soda, salt and cayenne pepper. Cut in shortening with a pastry blender or two forks until crumbly. Gradually add milk, stirring just until dry ingredients are moistened. Dough should be sticky. Do not overwork dough.

On a lightly floured surface, roll dough to 1/2-inch thickness with a floured rolling pin. Cut 12 biscuits with a 2 1/2-inch round biscuit cutter. Place biscuits in a cast iron skillet or hoecake pan that has been sprayed with a non-stick spray and brush tops with half of melted butter. Bake for 12 to 14 minutes, or until lightly browned. Brush with remaining melted butter before serving.

* Sausage Gravy:
* 1 pound Paula Deen Breakfast Sausage by Smithfield (either hot or mild)
* 3/4 cup flour
* 4 1/2 cups milk
* 1 tablespoon Louisiana Style hot sauce
* 1/2 tablespoon freshly cracked black pepper
* Salt to taste
* 2 tablespoons butter

While biscuits are baking, start gravy. In in large saute pan or cast iron skillet, cook sausage over medium-high heat until browned and crumbly. Reduce heat to medium and add flour to sausage; mix thoroughly. Cook until flour browns, about 4 minutes stirring constantly. Add milk slowly and increase heat to medium-high. Continue to stir. Add hot sauce, pepper and salt. As the gravy comes to a boil, it will thicken. If too thick, add additional milk. After boiling, reduce heat to a simmer and add butter.

To serve place two of the buttermilk biscuits on each plate and top with sausage gravy and garnish with freshly cracked pepper.

Plan B

Okay, I got my book. I have read several chapters in it. It is good. It is a must read! :)

I am so thankful it is the weekend. Tomorrow I have lots of cleaning to get done before I fly out. I got all the grocery shopping done tonight. We did it as a family, and that was interesting! I think we spend more money when we all go out to do that! :)

I fly out for the last round of chemo. AND hopefully the LAST round of chemo! To celebrate, before my mom starts her chemo we are going to go see Letters to Juliet and we are going out to eat! :) That should be fun. I have enjoyed spending some one on one time with my mom, even though it has been a hard season.

Seasons, they are funny aren’t they. I have decided though that I really do not want to spend most of my time in mountain top experiences. Because that means you are working through something or going through something to get to the top of that mountain, and it is usually a LOT of work. I think I would like him to just guide me along still waters or by a river! We have been in this season that has been hard. I know we are coming out of it swinging, but it is what it is.

They boys told me tonight that they wanted to live with me forever. Forever, I said? Yep, forever with our wives and kids! I asked why…and they said because they loved us so much and because we have the best family. That totally made my day. I am so happy they look at our home as a place of peace and a place they want to come back too. I love my boys to pieces! They are the sweetest!

Shattered Dreams

I am listening to a series of sermons by Pete Wilson called Shattered Dreams…and it is very AWESOME! If you have some time, I highly encourage you to stop, get some coffee, tea, whatever, and listen, open your heart, and let God speak to you. I am just taking it all in. While we are talking about Pete Wilson, go get his new book too called “Plan B”. I am going to be buying it tomorrow. And I can not wait to dig into it. Thinking about doing a Bible Study with it. We will see. Anyways, go watch the series, it will be a great use of your time…I promise!

Happy Mother’s Day

I hope you all have a wonderful Mother’s Day. :) And those that are still waiting to be a mommy, I pray that the Lord will bless you this year with a child!

I keep meaning to post things. But life just always seems to catch up with me in a big way, and then I am too tired to sit down and write anything. I leave again in a week, actually next Sunday for my mom’s last round of chemo. I will be there Sun-Wed this time. I am so thankful that we are on the last round of chemo. And praying that when they do the scans that they come back all clean.

Tomorrow we go down to Scottish Rite for Krystina’s legs. I love that hospital. They do such an awesome job and the service has been incredible.

Tomorrow starts a new week! And I am going to enjoy each day of it!

Good Intentions

So I have had every good intention to post more…And I have not. We have been so busy, and I fly out again tomorrow for my mom’s 5th round of chemo! I am telling you time is flying by! I have so much laundry to do before I fly out tomorrow. I don’t know about you, but if I miss a few days of laundry….then it piles up so fast with a family of 7….and I have not done laundry in a week! I know…so bad…I always kick my self in the rear end, when I let it get like this. I wish I had a great system that I stuck too…does anyone have a great idea!?? If you do, please share so in the comments!

Anyways, I have thought about many things to blog about…I should have written them down so that I could have remembered them! ha!

I did want to mention a website. I have tried several recipes from Our Best Bites. I would encourage you to check it out as well. They have some really great recipes! They are pretty easy, not expensive, and kid friendly! My kids have enjoyed every recipe that I have tried!

Well, maybe when I get home from this round of chemo, I will start being a better blogger! :)

Round 4

Round 4 of chemo for my mom begins this week. I fly out again tomorrow. I am trying to do the laundry and pack. I rented 3 movies for the kids to watch so I can get stuff done! Is that terrible or what…plop my kids in front of a movie to work? I am telling you some times you have to do what you can, in order to get anything done with 5 kiddos running around! :)

I am reading a really great book right now by Beth Moore, it is call So long Insecurity. Have you read it? Any thoughts about it? I love it! I really do! I highly recommend reading it. Especially if you are looking for a good book to dig deep in. It has been very eye opening for me! Another great book that I just finished reading was by John Bevere called Extra Ordinary! You really should read it!

Okay I have to get back to packing. .. .. .. and the MOUNTAIN of laundry that I can never get caught up on!

home

We are home from the hospital. He actually got home late Monday night. We saw the doctor this morning for a follow up visit. Got new medicines. He is doing much better. That was one scary experience.

I am trying to get caught up on life again before I fly out next Wed. When I realized that I fly out again in a week, I was a bit sad. Just because I have so much to do, in so little time. Tomorrow 4 of the kids have dentist appointments. It seems like every day, we are trying to cram as much day in as we can….especially since I leave in a week again. It is exhausting. It really is…
